Pumpkin Cake

1 (18.25 ounce) package spice cake mix
1 (15 ounce) can pumpkin

Preheat the oven to 350 degrees. Generously grease a 9×13 inch-baking pan.

In a large bowl, mix together the spice cake mix and canned pumpkin until well blended. Spread evenly into the prepared pan.

Bake for 25 to 30 minutes in the preheated oven, or until a knife inserted into the center comes out clean.

Cool and serve, or store in the refrigerator. This tastes even better the next day.

Bread Stuffing

1 (1 pound) loaf white bread
1 small red onion, chopped
1 teaspoon poultry seasoning
1 pinch salt
1 pinch ground black pepper
1/4 cup water

Moisten all the bread with as much water as is needed to make moist.

Add the onion, seasoning, and salt and pepper. Mix with hands.

Place in turkey or in foil and wrap up and cook for at least 1 hour, longer if you are cooking it in the turkey.

May open the foil for last 15 minutes to make top crusty.
