Mashed-Avocado and Egg Toast
• ½ avocado
• 1 hard-cooked egg, chopped
• Kosher salt and freshly ground pepper
• 1 slice whole-grain bread, toasted
• 1 teaspoon minced chives
Lightly mash avocado in a small bowl. Stir in egg and season with salt and pepper. Spread mixture over toast and sprinkle with chives.
